Envisioning y'all in floppy hats and swimsuits in a cave is highly amusing.
I actually love last-minute, no planning in advance vacations. You can't do some things that have to be pre-scheduled, but you have the flexibility to do all sorts of other things that you couldn't have done if you had to pre-book everything, and I've had lots of great experiences that way (you can find out more about what to do and where to stay while you're there than you do while you're planning from far away).
