I've been considering crust and then apples and then really sharp cheddar cheese..

(actually i was considering doing it in puff pastry sheets, a la baked brie...)

Puff pastry! That's brilliant. Good idea.

Sharp cheddar cheese works really well in an apple pie crust, at least. fennel and I baked apples in butter with spices and diced shallot last night, and I'm still floaty. I was thinking that, plus maybe a bit of port and black pepper, and a mildly cheesy crust.
